Do You Like Peanut Butter?

If so, then you’ve got to try out this wonderful dessert!  (Oops, I have once again failed to take a picture of the finished product . . . mea culpa, my humblest apologies . . . but trust me, it is delicious!)

Peanut Butter Torte

Crust
1-1/4 cups graham cracker crumbs
1/4 cup sugar
1/3 cup butter

Melt the butter and stir in the sugar. Add the crushed graham cracker and stir until mixed. Press onto the bottom and up the sides of a 9″ springform pan. Bake in a 375 degree oven for 4-5 minutes (or until the edges are slightly browned); cool on a wire rack before filling.

Filling
8 ounces of cream cheese (softened)
3/4 cup peanut butter
1 cup powdered sugar
2 Tablespoons milk
1 teaspoon vanilla
1 cup whipping cream
2 Tablespoons powdered sugar

Chill a medium mixing bowl and your beaters (this works best when whipping cream).

For the filling, beat the cream cheese and peanut butter until smooth. Add the 1 cup of powdered sugar, the 2 Tablespoons of milk, and the vanilla and beat until smooth.

In the chilled mixing bowl, beat the whipping cream (with the 2 Tablespoons of powdered sugar) until soft peaks form.

Gently fold 1/3 of the whipped cream into the peanut butter mixture. Fold the remaining whipped cream into the mixture and then spoon into your graham cracker crust.

Cover and chill for about two hours (or until set).

Chocolate Topping
3/4 cup semi-sweet chocolate chips
1-2 Tablespoons of milk

Melt the chocolate chips and a little milk. Mix until smooth and then spread over the top of the chilled pie. Sprinkle with chopped peanuts and chill until set.
