Here is a easy recipe for a quiche that does not require a pastry crust (the hash browns substitute quite nicely). Enjoy!
3 cups frozen, loose-pack shredded hash browns, thawed
1/3 cup of butter, melted
1 cup diced and fully cooked ham
1 cup (4 ounces) shredded cheddar cheese
1/4 cup diced green pepper
1/2 cup of milk
1/2 teaspoon of salt
1/4 teaspoon of pepper
Press the hash browns between paper towels (to remove any of the excess moisture) and then press onto the bottom and up the sides of an ungreased 9-inch pie plate. Drizzle them with butter. Bake at 425 degrees for 25 minutes.
Combine the ham, cheese, and green pepper and spoon over the top of the crust.
In a small bowl, beat the eggs, milk, salt, and pepper and pour it over the ham, cheese, green pepper and crust.
Reduce the heat to 350 degrees and bake for 25-30 minutes (or until a knife inserted in the middle comes out clean). Allow to stand to ten (10) minutes before cutting and serving.
