Slam Dunk!

Here is a cookie recipe that is sure to be a slam dunk.  And, it is gluten-free to boot!

Triple Chocolate Dunk Cookies  (courtesy of Penzeys Spices)

1 cup sugar
1 cup butter (2 sticks), softened
2 egg yolks
1-1/2 teaspoons of vanilla extract
2-1/4 cups gluten-free flour
1/4 teaspoon of salt
1 teaspoon of orange zest

12-ounce bag of dark chocolate chips
1 cup white chocolate chips
1 cup milk chocolate chips

In a mixing bowl, cream together the sugar and butter.  Add the egg yolks and vanilla and mix well.  Add the flour, salt, and orange zest.  Beat until well mixed.  Cover and refrigerate for at least one hour or until the dough is firm.

Preheat the oven to 350 degrees.  Line baking sheets with parchment paper and set aside.  Scoop enough dough to roll between your hands to create 1- to 1-1/4 inch balls.  Place on the baking sheet at least two inches apart.  Press down slightly.  Bake at 350 degrees for 8-12 minutes or until slightly brown.  Allow the cookies to firm up a bit before using a large flexible spatula to remove them from the sheet and place them on a wire rack to cool.

Melt the dark chocolate chips in a heavy saucepan over low heat, stirring frequently.  Dunk the cookies in the chocolate (halfway) and place on parchment paper.  Once all the cookies are dunked, melt the white chocolate chips and drizzle over the cookies.  Repeat with the milk chocolate.
