The Proper Seasonings!

It never ceases to amaze me how many words I still have to learn.  Here is one from the kitchen that I had never run across before.  Oftentimes when cooking broths and soups, before serving (or if you are wanting to serve a clear broth), you will want to strain the concoction so that the mirepoix is separated out.

mirepoix

\ mir-pwah \, noun;

1. a flavoring made from diced vegetables, seasonings, herbs, and sometimes meat, often placed in a pan to cook with meat or fish.
2. finely chopped vegetables, as onions and carrots, sometimes with meat, often used as a bed for meat that is to be braised.
