In honor of one of my all-time favorite skits from Saturday Night Live (The Olympia Restaurant), here is a recipe for a Cheeseburger Pasta dish that is simple and delicious.
1-1/2 cups uncooked whole wheat penne pasta
3/4 pound of lean (90%) ground beef
2 Tablespoons finely chopped onion
1 can (14-1/2 ounces) diced tomatoes
2 Tablespoons dill pickle relish
2 Tablespoons of prepared mustard
2 Tablespoons of ketchup
1 teaspoon of steak seasoning
1/4 teaspoon of seasoned salt
3/4 cup of shredded cheddar cheese
Chopped green onions (optional)
- Cook the pasta per the directions on the package. At the same time, in a large skillet, cook the beef and the onion over medium heat until the meat is no longer pink; drain. Drain the pasta and add it to the meat mixture.
- Stir in the tomatoes, relish, mustard, ketchup, steak seasoning, and seasoned salt. Bring to a boil. Reduce the heat and simmer, uncovered, for about five (5) minutes.
- Sprinkle with cheese. Remove from the heat; cover and let stand until the cheese is melted. Garnish with green onions (if desired).
